A Message from Chapter President, Nora Galdiano:

Greetings Chefs, Culinarians, and Colleagues!

Fall is here and we’re starting to feel just a bit of less heat in the air in Central Florida. Chefs are starting to create their menus using bountiful products that the season has to offer.

Another successful Culinary Arts Competition is behind us and it could not have been a success without the support of countless hours of volunteering from many people. A special thank you goes out to Chef Steve Jayson, Culinary Show Chairman and his team from Universal Orlando for overseeing the competition kitchen, the scoring team of Roger Newell, Bob Costello, and Marcus Herrington, Richard Cote for making sure that the tasting judges were taken care of, Joe Alfano for the transportation of the judges, Dawn Viola for coordinating all the volunteers, Roy Briggs and Lynda Alfano for watching the ACF-CFC booth to recruit for new members and sponsors, the ACF/CFC Board members, the numerous students from Le Cordon Bleu, Second Harvest Food Bank, and Mid Florida Tech for their support in various areas.

I want to personally congratulate all the winners of the competition:

Certification continues to be one of the top reasons why Chefs become members of the American Culinary Federation. At the end of August, six Chefs successfully completed their practical exam held at Le Cordon Bleu Orlando. Congratulations to the following Chefs who are on their way in becoming certified: CEC Level-Andres Alvarez and James Wessman, CCC Level-Aaron Gerardi, Kate Higgins, Cesar Suchite, and Kathleen Vossenberg.

Congratulations also goes out to Chef Lauren Cooke, CEPC, Chef Instructor at Mid Florida Tech for passing her CEC practical exam that she took in St. Augustine. Once certified, Chef Cooke will be one of few Chefs that will hold both the Certified Executive Chef and Certified Executive Pastry Chef certifications.

Our next meeting will be on Monday, October 7th at Mid Florida Tech starting at 6:30pm. We will once again open up the floor for nominations for the 2014-2015 officer elections.

Also, start thinking about who you would like to nominate for the Chapter Awards, Chapter Chef of the Year and Achievement in Culinary Excellence. The criterias are posted on the website at: Chef of the Year and Achievement in Culinary Excellence.
